Executive Chef Yonjan, who studied under Chef Miguel Bertolo, awarded second best sushi chef in the World Sushi cup in 2017, has placed focus on combining traditional Edomae style techniques with a modern touch. Chef places an emphasis on sourcing the finest ingredients and creates an ever evolving menu including the highest quality fish both locally sourced and imported directly from Japan.
During the three year preparation of opening Omakase Wa, every moment was painstakingly considered on a journey that span the globe from Japan, to England, and to Canada to bring the very best to Lisbon.
